Did you know chickens create a protective coating when they lay an egg? This is called the ‘bloom’. When eggs are laid, the bloom protects the porous egg from absorbing bacteria. If the bloom is left intact, the egg is considered shelf stable without the need for refrigeration. These eggs can be kept on the countertop unwashed for as much as 2 weeks before refrigerating and in the refrigerator unwashed as long as 3 months. Washing the eggs removed the protective bloom and creates an environment for bacteria to enter the shell. The eggs we sell are only a few days old and unwashed. If you’d like washed eggs, just add a note at check-out.
